Preparation, uses, and tips

Wash scallions just before using, and remove any wilted outer leaf tops. Chop scallions into salads, toss into cooked rice or bean dishes, or use as a garnish for polenta or soup.

Buying and storing tips

Scallions can be found in the fruits and vegetables section of health food stores and supermarkets. Look for those with a firm white base and bright, fresh-looking leaves. Store them in a plastic bag in the refrigerator for up to five days.
