Preparation facts

Ingredients

2 lbs squid

2 Tbs salt

6 cups water

1 cup white vinegar

1/4 cup olive oil

1/4 cup each water

4 garlic cloves, chopped

2 Tbs fresh oregano, chopped or 2 teaspoons dried

1/2 tsp salt

1/4 tsp freshly ground black pepper

Directions

Clean squid and cut crosswise into ½-inch pieces. Add salt to water, bring to boil, and add squid. Reduce heat, cover, and simmer for 10-15 minutes or until squid is tender. Drain, rinse thoroughly in cold water, and then drain again. Combine remaining ingredients in a ceramic or glass dish. Add squid. Cover and marinate a few hours in refrigerator.
