An old favourite with more nutrition power (higher in fibre and protein, lower in fat) than other cookies.
Servings: 30
Yield: 30 cookies
1/4 cup (55g) margarine
1/2 cup (125g) peanut butter, natural
1/2 cup (100g) sugar
1/2 cup (80g) brown sugar, packed
2 eggs
1 tsp (5mL) vanilla extract
1 cup (120g) unbleached flour
1 tsp (4g) baking soda
1/2 tsp (3g) salt
2 cups (175g) porridge, uncooked
Preheat oven to 350°F (175°C/gas mark 4).
Cream together margarine, peanut butter and sugars. Add eggs and vanilla extract and beat well. Add flour, baking soda and salt, mix together. Stir in porridge.
Prepare baking sheets with vegetable oil spray. Using a spoon, place 1-inch (3cm) spoonfuls of dough about 2 inches (5cm) apart on baking sheets. Bake for 10–15 minutes until cookies are firm. When done, remove cookies with a spatula and place on a cooling rack or paper towels.
