Yield: 2 17-inch (43-cm) pizzas
3 cups (720mL) warm water
1 Tbs (15g) sugar
2 1/4 Tbs (20g) yeast or 3 packages
6+ cups (720g) flour
In a bowl, put 3 cups (720mL) of warm water, sugar, and yeast. Let stand for 15 to 20 minutes or until it bubbles.
Add 1 Tbsp salt (20g) and stir. Add 5 cups (600g) of flour and stir at #2 speed on Kitchen Aid for one minute. Add 1 cup (120g) more of flour. Add more flour, if needed, until dough separates from the bowl. The dough should be almost sticky. Keep on #2 speed for 8 to 10 minutes. Put dough on lightly floured surface and knead a few times. Divide the dough in half and place in two oiled medium bowls. Cover with plastic wrap and a kitchen towel. Let it rise about one hour or until it doubles.
