Yield: 2 servings
1/2 cup (115g) fresh pineapple
1 ripe banana
1/4 tsp (4mL) coconut extract
2 cups (480mL) vanilla-flavouredsoya drink
4–6 ice cubes
Pineapple wedge and toasted coconut for garnish
Blend all ingredients together in a blender until thick and smooth. Garnish with toasted coconut and pineapple wedge.
